Cake calms; thwarts familial instability
After supper the other night, someone asked, "We got anything sweet?"
Forgive our cavepeople grammar. Keepin' it real here.
"Huhh-huhh," I grunted in response, for I had just whipped up this cake that very morning.
Not only does it prevent the looting of chocolate chips from my former secret hiding spot, but this cake is also perfect for breakfast or as a boost of energy in the afternoon.
Here's the recipe:
Lemon Loaf Cake
Ingredients:
For cake:
2 sticks butter
3 cups flour
3/4 cup milk
1/2 Tablespoon vinegar
1/3 cup lemon juice
1 1/2 teaspoons salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 cups sugar
5 eggs
For glaze:
2 cups powdered sugar
3 1/2 Tablespoons lemon juice
Directions:
Mix cake ingredients and pour into a greased and floured loaf pan.
Bake at 350 degrees for 50 to 60 minutes.
Allow to cool. Remove from pan.
Mix glaze ingredients and drizzle over cake.

Got anymore of that cake left?!? Looks darkish!
ReplyDeleteLOL. Do you like dark cake, Trish? I know a couple people who prefer their cookies burned. I wonder if the cake is dark because I used cast iron pans?
